Fish Taco Salad

Ingredients
  

Fish Marinade

  • 1 T Chili Powder
  • 2 Garlic Cloves, minced
  • 1 t Cumin
  • 1 t Kosher Salt
  • 10 Grinds Pepper
  • 2 T Canola Oil

Salad

  • 1-2 Heads Napa Cabbage
  • Shredded/Matchstick Carrots
  • Edamame
  • Peanuts, chopped
  • 1 Apple cut into matchsticks
  • Spicy Peanut Dressing from Trader Joe's
  • 1-2 Cod pieces from Trader Joe's or 1 piece of Cod per person, cut into small pieces

Instructions
 

  • Mix marinade ingredients in shallow container, place all the Cod pieces in and coat on both sids. Allow to sit for 30 minutes or longer.
  • Shred Napa Cabbage
  • Cook fish in skillet or air fryer sprayed with cooking spray
  • Layer cabbage, carrots, edamame, apple and peanuts in bowl(s) and place fish on top, dress with dressing
