Low Carb Squash Casserole and Last Weeks Top Sellers

Hey y’all! I hope you had a wonderful weekend. We did. Today is finally my day to shop the you know who sale, so I’ll be up first thing to try and get the things on my wish list. Wish me luck. It’s been a bit since I’ve shared a recipe, and I’ve had this one I’ve been meaning to share that’s so perfect for summer [or any other time]. It’s low carb, and with so many people eating this way, it’s nice to have some options. I’m also going to recap the top 5 sellers from last week.

Low Carb Squash Casserole

Prep Time 15 mins
Cook Time 30 mins
Servings 6


  • 3 Yellow Squash quartered and sliced
  • 3 Zucchini quartered and sliced
  • 1 Medium Onion diced
  • 2 tbsp Butter
  • 1/2 cup Sour Cream
  • 1/4-1/2 tsp Garlic Powder
  • Salt & Pepper to taste
  • 1 cup Shredded Cheddar
  • 1 cup Shredded Parmesan
  • Olive Oil


  • Saute onion in butter until tender and translucent. Remove to mixing bowl.
    Drizzle olive oil in skillet and add zucchini. Cook until beginning to soften and then add yellow squash. Continue cooking until tender.
    While squash is cooking, add sour cream and cheddar cheese to onion along with garlic powder, salt & pepper.
    Remove from skillet and place in colander to drain. Place a small plate or something on top and press down to squeeze out excess liquid.
    Add to bowl with onions, sour cream and cheese. Combine thoroughly. You can taste at this point to check seasoning and add more if desired. Pour into prepared casserole dish.
    Sprinkle with shredded parmesan.
    Bake at 350° for 30 minutes or until cheese is melted and bubbly.

Last weeks top 5 didn’t really come as a shock. They are all good ones, and I’m always happy to see we like the same things.

Aerie sweatshirt – my new zebra one should arrive this week, and I can’t wait to get it. Aerie is constantly coming out with new sweatshirts, and I just can’t seem to resist or say no. These are perfect for leggings due to the length and slits on the side, but they also look super cute with denim shorts.

Speaking of denim shorts, these from Kut from the Kloth were popular. Kut consistently has great denim products. I love their jeans, my favorite denim jacket is Kut, and now their shorts have joined the ranks. There are several pairs of Kut jeans in the Nordstrom sale, so if you’re interested in trying them, this is the best time to grab some.

Tula Cleanser Set – I’m loving that y’all are loving Tula. This set is part of the Nordstrom Sale. While you already know I am a huge fan of Rodan + Fields, and use their products religiously, I also like to try other brands to share with you. I also like to use some kind of cleanser before moving on to any kind of mask that comes with my regimen. Right now I’m loving this Tula Cleanser. Sunkissed Tee – Again this one made rank in the favorites. You’d better believe when I pack for the beach, this tank will be included.

Soma panties are my favorite, and apparently y’all are sharing my love for them. The 10/$40 sale last week was a big hit! The lace hipsters have been my favorite panties for at least 7 years, and they are the only ones I purchase. The lace on the back doesn’t crawl or show through leggings.
